Maybe I can survive dips. by choice. There’s just something so addictive about potato chips and dip, and this easy cornstarch dip recipe is no exception.

This is a cool, creamy dip made with just five ingredients. It’s perfect for a picnic, a boat day, or really any party.

This dip feels midwestern to me, though I’m not sure of the actual origin. I’ve sometimes heard of versions of this dip called “crack corn dip” and it reminds me of that Rutile cheese sauce In that it’s something I’d probably find at a family get-together.

How to make corn dip

Drain the corn from the canned juices. Finely chop the green onions. Finely chop the pepper jack cheese (if it isn’t).

In a large bowl, stir together the corn, mayonnaise, sour cream, green onions, and cheese. Taste and add any spices or seasonings you feel are needed. I tend to add a little garlic powder, cayenne, salt and pepper usually.

Serve cold with tortilla chips or vegetable slices such as bell peppers.

Tips and differences

  • If you can’t find southwest corn or mexicorn, you can use any canned corn and add a little finely chopped red pepper for extra crunch and color.
  • You can substitute Greek yogurt for the sour cream if you want a lighter version of this dip.
  • If you really want to up the flavors, try mixing it into a packet (or half a packet) of taco or fajita seasoning. Or add a little chopped cilantro.
