Here are the ingredients for the salad you’ll need
Strawberry: You will need fresh strawberries for the salad, but you can use fresh or frozen strawberries for dressing. The mature the better! For the best flavor, look for strawberries that are red in color and firm to the touch with green tops that are fresh and free of bruising. About 2-3 medium strawberry slices per serving is a good portion to stick to. Chop them the way you want!
baby spinach: We love baby spinach for this salad. It is high in vitamins A, C, K, and folate, as well as minerals such as iron, calcium, and potassium. Butter lettuce works well, too, as does mixed greens or watercress for more of a peppery bite.
Pecan: Strawberries and pecans are the perfect couple! Pecans are high in fiber, minerals, and rich in heart-healthy monounsaturated fats. Toss them in a salad or lightly roast them to bring out their warm nutty flavour.
Feta (we used vegan!) – The feta cheese is optional, but the rich saltiness adds another layer of texture and flavor to this salad. We found Vegan Feta at Trader Joe’s and are now obsessed! It tastes just like the dairy-based feta cheese we know and love. It is ideal whether you are looking to reduce or avoid dairy products.
Red onion slices: Crispy and slightly sweet with a tart bite, red onions balance well with strawberries.
Red wine vinegar: A great complement to strawberries, as is red wine, red wine vinegar also contains beneficial antioxidants.

How to make strawberry vinaigrette
Making this spring-inspired marinade is super easy! You don’t even have to do a lot of chopping. Simply place everything in a food processor or blender and blend until smooth.
If you prefer a slightly more textured bandage, you can flip it over and stop when you get to the consistency you want.
Store the strawberry vinaigrette in the refrigerator until ready to serve.

Strawberry and walnut salad with strawberry vinaigrette

- 1 cup Strawberry
- 2 tablespoons Red wine vinegar
- 1 small spoon shallot minced (optional)
- 1 small spoon honey
- 1/8 cup Udo Oil Blend 3-6-9
- ¼ Teaspoon black pepper
- ¼ Teaspoon salt
Prepare the sauce: Place all the dressing ingredients in a blender or small food processor and blend until smooth. Set aside or store in the refrigerator until ready to serve.
Salad plating: Divide vegetables among bowls. Top with fresh strawberry slices, pecans and feta. Served with strawberry vinaigrette on the side.
Apple cider vinegar or champagne vinegar can be used in place of the red wine.
To intensify the flavor of the nuts, we toast the pecans a little. Simply spread the nuts evenly in a single layer on a baking sheet and bake for 5 to 8 minutes at 350 degrees. Watch them closely so they don’t burn. Cool before adding to your salad.
