Macaroni with boursin and peas
You will need:
1 pack of Garlic and fine herbs
1 pound pasta of your choice (I personally like fusilli corto bucatti)
1 cup fresh or frozen peas (you can substitute green beans, broccoli, or spinach for them)
Salt and Pepper
1 lemon optional
Boil a pot of heavily salted water. Add your pasta and let it cook until almost al dente al dent (since the pasta will cook a bit later, in the pan with the boursin). If you are using frozen peas, toss them in during the last few minutes of pasta cooking.
Drain the pasta (and the peas, if using frozen), reserving at least 1 cup of the pasta water.
In a large saucepan, over medium heat, add the boursin and bring to a simmer until it begins to melt. Add the pasta and a splash or two of the pasta water and stir until a creamy sauce forms. If you are using fresh peas, add them now. Season with fresh black pepper and salt to taste.
Add a little lemon juice and lemon peel before serving. Enjoy!
As for the other options? In the spring, Ethany likes to make an herb tart by spreading cheese on melted puff pastry, then topping it with asparagus (or broccoli), olive oil, lemon, and sea salt, and baking for half an hour at 375 degrees Fahrenheit.
Or you’ll brush the boursin on both sides of the roasted ciabatta and layer beets, avocado, and veggies (like carrots, cucumbers, and sprouts), then finish with lemon and olive oil. How good does that sound for a work-from-home lunch?
