Thumbprint cookies – a pretty mess

I love thumbprint cookies, sometimes called halongruta. This thumbprint cookie recipe is simple – the dough is a soft cookie dough that you can spread or leave plain.

Then, you make an indentation in the center of each ball of dough with your thumb (or a teaspoon, like the bottom of a tablespoon) and fill with jam before baking.

If you are keeping the traditional ones, you may want to fill them with raspberry jam, but any other jams or fillings can be used such as Nutella.

For some of the thumbprint cookies pictured in this post, I added some Freeze dried berries (crushed into powder) into half a dough. This is by no means a traditional way to make thumbprint cookies—just an option, as you may have noticed in the recipe card below.

How thumbprint cookies work:

Melted butter and sugar are whipped together. Next, add the eggs and vanilla extract. Then add flour and salt until a soft dough is formed.

For best results, refrigerate dough for at least 1 hour (and even overnight); Otherwise, these can spread some when baking.

Before baking, make a hole in each ball of dough with your thumb and fill it with raspberry jam or whatever filling you use. Then you are ready to bake!

  • In a medium bowl, whisk the butter and sugar together until well blended. Add eggs and vanilla extract, stirring. Then add flour and salt. Cover the dough and refrigerate for an hour or overnight.
  • Divide the dough into 20 pieces (the balls of dough should fit in the palm of your hand). Form a ball, then press gently on a clean surface so the bottom has a flat edge.

  • Use the underside of a teaspoon or your thumb to work the center in well. Put your finger in the water and align it with the rim or rim of the center of the well.

  • Place on a baking sheet lined with parchment paper or a baking mat and fill the center with jam or jelly. Repeat for all cookies.

  • Bake at 325°F for 12-14 minutes. I like these a little too much, so I tend to stick to about 12 minutes.

For this half-and-half look, I split the dough in half (before refrigerating) and added a few tablespoons of crushed freeze-dried berries to the dough. Then I used Nutella for the filling instead of the raspberry jam.
